I did find a very nice tool called Fallout 4 Tweaker by Bilago that allowed me to search for all variables that controlled Pipboy settings and with a bit of trial and error I was able to fix the cursor issue and restore full functionality. Dundjinni can make fantasy or future maps, and thus should suit post-apocalyptic RPGs. I dug around online and through the forums and couldn't find the answer to fix the cursor issue for the Pipboy map if using the doubled resolution and a controller. Thought I would post this here as well in case people miss my original post over on the FallUI - Inventory page posts.
